Ancient and medieval medicine focused on balancing the four "humors" of the body (blood, phlegm, black bile, and yellow bile), by manipulating forces of moisture and heat. Plants, like other natural bodies, were recognized as having different degrees of cold or heat, wetness or dryness -- something like how we now rank substances on scales of acidity or density. Roses, for example, were said to be cold in the first degree and dry in the third degree and thus a good remedy for inflammation.
